Zucchini Oatmeal Bites

Here’s a quick snack that only takes 15 mins to make plus it’s vegan and gluten-free.

INGREDIENTS

  • 1 1/2 cups old-fashioned oats

  • 1/3 cups sliced almonds chopped

  • 1 tablespoon chia seeds

  • 3/4 cup almond or coconut butter

  • 2 tablespoons plus 1 teaspoons agave nectar or honey

  • 1/4 teaspoon ground cinnamon

  • 3/4 cup packed grated zucchini

 

INSTRUCTIONS

  • In a large bowl, mix together oats, almonds and chia seeds

  • Stir in almond butter, agave and cinnamon until well combined

  • Place grated zucchini on a sheet of paper towel to squeeze out excess liquid

  • Add zucchini to oat mixture

  • Use a cookie scoop to place balls on a baking sheet

    • Spraying your scooper with cooking spray will help mixture from sticking

  • Cover and refrigerate for 1 hour

  • Store remaining bites in an airtight container for up to 1 week
