Vanilla Baked Pears

INGREDIENTS

  • 4 ripe pears (Anjou)

  • 1/2 c. pure maple syrup

  • ¼ tsp cinnamon 

  • 1 tsp pure vanilla extract

  • Toppings:

  • Greek yogurt

  • Granola

INSTRUCTIONS

  1. Preheat oven to 375º.

  2. Cut pears in half, then cut a small sliver off the underside so the pears sit flat when placed in a baking pan.  Core out the seeds.

  3. Whisk together maple syrup and vanilla extract and drizzle over pears.  Reserving about 2 Tablespoons for after baking.

  4. Bake for about 25 mins until soft and lightly brown on edges.

  5. Remove from the oven and immediately drizzle the remaining maple syrup mixture.

  6. Serve warm with granola and yogurt.

  7. Serve warm with granola, yogurt and nuts.

  8. Store leftovers in the refrigerator for up to 5 days.
