Tuna Salad & Chickpea Stuffed Avocado

INGREDIENTS:

  • 2 Large avocados

  • 5 oz Good quality tuna

  • 4 tbsp Plain greek yogurt

  • 2 tsp Olive oil

  • 2 tsp Lemon juice

  • 1/2 cup Micro greens or cilantro

  • 1/3 cup Chickpeas

  • 1/2 tsp Salt

  • 1/2 tsp Pepper

  • 1/2 tsp Garlic powder

  • 1/2 tsp Smoked paprika

  • 1/2 cup Quick pickled onions

  • 1/4 cup Feta

DIRECTIONS:

Tuna mixture:

  • 1 can of good quality tuna

  • 4 T plain greek yogurt

  • 2 tsp olive oil  

  • 2 tsp lemon juice

  • Set aside

In another bowl, season ⅓ C chickpeas with:

  • ½ tsp salt

  • ½ tsp pepper

  • ½ tsp garlic powder

  • ½ tsp paprika

  • Set aside

FINALLY…

  • Cut open avocados

  • Fill it with tuna salad

  • Layer the chickpeas

  • Top it off with cilantro, pickled vegetables (eggplant) and feta cheese
