Tuna Salad & Chickpea Stuffed Avocado
INGREDIENTS:
2 Large avocados
5 oz Good quality tuna
4 tbsp Plain greek yogurt
2 tsp Olive oil
2 tsp Lemon juice
1/2 cup Micro greens or cilantro
1/3 cup Chickpeas
1/2 tsp Salt
1/2 tsp Pepper
1/2 tsp Garlic powder
1/2 tsp Smoked paprika
1/2 cup Quick pickled onions
1/4 cup Feta
DIRECTIONS:
Tuna mixture:
1 can of good quality tuna
4 T plain greek yogurt
2 tsp olive oil
2 tsp lemon juice
Set aside
In another bowl, season ⅓ C chickpeas with:
½ tsp salt
½ tsp pepper
½ tsp garlic powder
½ tsp paprika
Set aside
FINALLY…
Cut open avocados
Fill it with tuna salad
Layer the chickpeas
Top it off with cilantro, pickled vegetables (eggplant) and feta cheese
