STRAWBERRY MOCHI PANCAKE

INGREDIENTS:

  • ¾ cup CocoJava Confetti Hawaiian Mochi Pancake Mix

  • ½ cup Unsweetened Coconut Milk

  • 2 tbsp Coconut Oil

  • Pomagranate Juice (for food coloring) 

  • Strawberries 

  • Skewer sticks

INSTRUCTIONS:

  • Combine ¾ cup pancake mix.  I’m using my CocoJava Coconut Confetti Hawaiian mochi pancake mix.

    • Yes, I also have my very own pancake mix.  It’s gluten free, vegan and if you love mochi and coconut you’ll love the flavor in this.  So I can’t wait. Ok...let’s continue

  • Add ½ cup Unsweetened Coconut Milk

    • You may use your choice of milk.  I like the unsweetened coconut because the mix has enough flavor of it’s own so this will just enhance it

  • Add 2 tbsp coconut oil

    • I like to use fractionated coconut oil 

  • Add a few drops of pomegranate juice uice for coloring 

    • If you don’t have beet juice, you can also use the juice from a can of beets (be careful not to add too much so it won’t alter the flavor)

  • Mix it all up.  I find it’s super easy to mix with a fork.

  • Use a tablespoon tool to drop some dollops on griddle 

  • Cook pancakes until they bubble up then flip to other side

    • I find using a small tong instead of a spatula makes it easier to flip pancakes

  • Set aside cooked pancakes

    OK, are you ready to put these cuties together?

    First, let’s prepare strawberry hearts:  

  • Use mini heart shaped cutter to cut heart from each strawberry, then cut each strawberry in half

  • Stack the mini pancakes, 4-5 to a pile.

  • Push a strawberry heart onto a bamboo skewer, then push into a stack of pancakes

  • Place on a cute wooden board and serve!
