SPICY WATERMELON MOCKTAIL

INGREDIENTS

·     1 heaping cup frozen watermelon

·     1 heaping cup fresh watermelon

·     ½ jalapeno (no seeds)

·     ¼ simple syrup

·     1 tbsp lime juice

·     Sparkling water to top

Garnishes:

·     1 tbsp kosher salt

·     ¼ tsp cayenne pepper

·     Jalapeno coins

·     Thin watermelon wedges

Instructions

1.  In a blender, combine frozen and fresh watermelon and half the jalapeno. Blend until you don't see any jalapeño left.   

2.  You’ll want to use frozen watermelons in place of ice so you don’t need to water down your mocktail  After all, watermelon is full of refreshing water that it doesn’t need any more.

3.  Strain mixture and discard pulp. Add lime juice and simple syrup and stir to combine.

4.  To make the salted rims, combine salt and cayenne powder in a wide flat bowl.

5.   Use a wedge of lime and run it around the edge of the glass, then dip the wet edges into the spicy salt.

6.  Pour glasses 2/3 full with mixture then top off with sparkling water. Garnish with a jalapeño coin and watermelon wedge and serve!
