Sesame Peanut Butter Noodles

INGREDIENTS:

  • 6 oz. of your favorite Asian noodles like soba, rice noodles, or ramen noodles (without the flavor packet)

  • 2 tbsp. pure sesame oil

  • 1 1/2 tbsp. peanut butter

  • 2 tbsp. agave

  • 2 tbsp. soy sauce

  • 1 1/2 tbsp. rice vinegar

  • 1 garlic clove, minced

  • ½ tsp. grated fresh ginger root

  • Optional Garnish: sliced green onions and sesame seeds

INSTRUCTIONS:

First, start by cooking your favorite ramen noodle.  If you don’t have any ramen packs, but who doesn’t have ramen in their home?  If you miraculously don’t, you could always just use traditional pasta, like fettuccini or linguini, or soba noodles like what I’m using.

I’ve pre-made the noodles and tossed them with a little bit of sesame oil so they won’t get too sticky.  

Next, let’s make the sesame peanut butter sauce.  

  1. In a medium bowl, add the sesame oil, peanut butter, honey, soy sauce, rice vinegar, garlic, and ginger. Whisk until well combined. The peanut butter should completely break down to create a smooth sauce.

  2. Pour the sauce over the hot noodles. Toss to coat.

Just before serving, I like to top the noodles with sliced green onions and sesame seeds and chopped peanuts.

These noodles are delicious as-is.  But, you can easily make them into a full meal by adding protein like shredded chicken breasts or tofu.  You can also add some vegetables (I love using the frozen ones that can be microwaved in the bag)  It’s just more convenient.
