ROSEMARY BEET BITES

INGREDIENTS:

  • 1 jar (16 oz) pickled whole beets, drained and chopped

  • 1 tbsp olive oil

  • 2 tsp minced fresh rosemary

  • 1 tsp grated orange zest

  • 2 cups fresh arugula, torn

  • ¾ cup crumbled feta cheese

  • Crostini bites

INSTRUCTIONS:

  • Pat beets dry with paper towels; place in small bowl

  • Add olive oil, rosemary and orange zest and toss

  • Divide arugula and place on crostinis

  • Top with beet mixture

  • Sprinkle with feta cheese
