ROSEMARY BEET BITES
INGREDIENTS:
1 jar (16 oz) pickled whole beets, drained and chopped
1 tbsp olive oil
2 tsp minced fresh rosemary
1 tsp grated orange zest
2 cups fresh arugula, torn
¾ cup crumbled feta cheese
Crostini bites
INSTRUCTIONS:
Pat beets dry with paper towels; place in small bowl
Add olive oil, rosemary and orange zest and toss
Divide arugula and place on crostinis
Top with beet mixture
Sprinkle with feta cheese
