NUTELLA MUG BROWNIE

INGREDIENTS:

  • 1/4 cup + 1 tablespoon (3 ¼ oz/90g) Nutella

  • ½ medium banana(1 large egg* , gently whisked)

  • 2 tablespoons all purpose flour

*Egg Substitutes for Brownies

For each whole egg used you can substitute it with one of the following:

  • 1 tablespoon ground flaxseed + 3 tablespoon water

  • ½ a medium Banana, mashed

  • ¼ cup (4 tablespoons) Apple sauce

  • ¼ cup (4 tablespoons) Silken Tofu 

  • ¼ cups (4 tablespoons) Yogurt (vegan or regular)

  • ¼ cup (4 tablespoons) Buttermilk

INSTRUCTIONS:

  • In a large microwavable mug add the Nutella and 1 egg and whisk together.

  • Add flour and mix until you have a smooth batter.

  • Microwave for roughly 45 seconds - 1 minute. (Cooking time is based on my 1200W so your timing might vary). 

  • Always keep a close eye on your mug while in the microwave so it doesn’t overflow or overcook.

  • You’ll know it’s done with the brownie is set and firm on top.

  • Serve with some coconut milk ice cream while it’s still warm.  Sprinkle with cacao nibs and coconut flakes.
