NO-BAKE PUMPKIN BITES

INGREDIENTS:

  • 1/2 cup almond butter

  • 1/4 cup pumpkin puree 

  • 3 tbsp maple syrup

  • 1 tsp vanilla

  • 1/4 cup coconut flour  ( or 3/4-1 cup almond flour)

  • 1 tbsp pumpkin pie spice

  • *1/4 tsp salt (if nut butter isn’t salted)

  • ⅓  cup mini chocolate chips + 1 cup melted chocolate for dipping.

INSTRUCTIONS:

  • In a large bowl, mix together nut butter, pumpkin, maple syrup, and vanilla.

  • Add in flour, pumpkin pie spice, and salt. Stir till combined.

  • Stir in chocolate chips. I found non dairy, gluten free mini chocolate chips!  Place in fridge for ten minutes.

  • While dough is in the fridge, melt chocolate for dipping. I like these convenient ones that come in a container and all you need to do is microwave it.  

  • Take dough out of the fridge and roll into balls. 

  • Place in the fridge or freezer to harden.
