NO-BAKE PUMPKIN BITES
INGREDIENTS:
1/2 cup almond butter
1/4 cup pumpkin puree
3 tbsp maple syrup
1 tsp vanilla
1/4 cup coconut flour ( or 3/4-1 cup almond flour)
1 tbsp pumpkin pie spice
*1/4 tsp salt (if nut butter isn’t salted)
⅓ cup mini chocolate chips + 1 cup melted chocolate for dipping.
INSTRUCTIONS:
In a large bowl, mix together nut butter, pumpkin, maple syrup, and vanilla.
Add in flour, pumpkin pie spice, and salt. Stir till combined.
Stir in chocolate chips. I found non dairy, gluten free mini chocolate chips! Place in fridge for ten minutes.
While dough is in the fridge, melt chocolate for dipping. I like these convenient ones that come in a container and all you need to do is microwave it.
Take dough out of the fridge and roll into balls.
Place in the fridge or freezer to harden.
