No-Bake Pineapple Cheesecake

INGREDIENTS:

CRUST:

  • 1 C Cinnamon graham cracker crumbs

  • 1/4 C Butter, melted

  • 1 T Monk fruit sweetener

FILLING:

  • 1 (8oz) Block cream cheese, softened

  • 1/2 C Heavy cream

  • 1/2 C Plain greek yogurt

  • 4 T monk fruit sweetener

  • 8iz Pineapple, finely diced

  • Pineapple slices to garnish

  • Maraschino cherries to garnish

DIRECTIONS:

  1. To make the crust: in a bowl, combine crushed graham crackers, butter, and monk fruit

  2. For the cheesecake filling: in a separate bowl combine:

    Cream Cheese

    Heavy whipping cream

    Monk fruit

    Vanilla extract

  3. Beat until creamy and thick

  4. Fold in Greek yogurt and diced pineapple

  5. To build your cheesecake, add crushed graham cracker crust into the bottom of small cups or bowls, pack it nicely into the bottom

  6. Add cheesecake filling

  7. Chill in the refrigerator for about 15 minutes

  8. Top with pineapple slices and maraschino cherries and serve!
