MUFFALETTA OLIVE SALAD

INGREDIENTS:

  • ½ cup olive oil

  • ¼ cup red wine vinegar

  • 6 garlic cloves, minced

  • 1 tbsp dried oregano

  • 1 tbsp thinly sliced scallions

  • 1 tbsp fresh parsley

  • 1 tsp crushed red pepper flakes

  • 1 ½ cups green olives w/pimientos

  • 1 cup coarsely chopped giardiniera

  • ½ cup coarsely chopped pickled beets

  • ½ cup pitted Greek olives, halved

  • ⅓ cup sweet red peppers, chopped

  • ¼ cup finely chopped celery

INSTRUCTIONS:

  • In large bowl, whisk the first seven ingredients

  • Add remaining ingredients; toss to coat

  • Cover and refrigerate for at least 8 hours, stirring occasionally

MUFFALETTA OLIVE SANDWICH

INGREDIENTS:

  • Ham

  • Salami

  • Thinly sliced mozarella

  • Smoked provolone

  • 9” round italian bread or other

INSTRUCTIONS:

  • Slice bread in half

  • Drizzle olive oil on both top and bottom

  • Layer in order of choice: Ham, Salami, Mozarella, Provolone, Olive Salad

  • Slice in quarter sized.  

  • Option to toast to melt cheese.  

  • Place extra olive salad in dish with pita chips as a nice option.
