MUFFALETTA OLIVE SALAD
INGREDIENTS:
½ cup olive oil
¼ cup red wine vinegar
6 garlic cloves, minced
1 tbsp dried oregano
1 tbsp thinly sliced scallions
1 tbsp fresh parsley
1 tsp crushed red pepper flakes
1 ½ cups green olives w/pimientos
1 cup coarsely chopped giardiniera
½ cup coarsely chopped pickled beets
½ cup pitted Greek olives, halved
⅓ cup sweet red peppers, chopped
¼ cup finely chopped celery
INSTRUCTIONS:
In large bowl, whisk the first seven ingredients
Add remaining ingredients; toss to coat
Cover and refrigerate for at least 8 hours, stirring occasionally
MUFFALETTA OLIVE SANDWICH
INGREDIENTS:
Ham
Salami
Thinly sliced mozarella
Smoked provolone
9” round italian bread or other
INSTRUCTIONS:
Slice bread in half
Drizzle olive oil on both top and bottom
Layer in order of choice: Ham, Salami, Mozarella, Provolone, Olive Salad
Slice in quarter sized.
Option to toast to melt cheese.
Place extra olive salad in dish with pita chips as a nice option.
