Mint Mojito Iced Coffee
INGREDIENTS (Makes 2 - 16ounce glassess)
2 cups of cold brew coffee
You could use a French press and make your own coffee or for convenience, you can pick up the ready-made ones
20 large mint leaves, divided
2 tablespoons demerara sugar
¼ cup soy milk, divided
Mint sprigs for garnish
INSTRUCTIONS
In a cocktail shaker add half of the mint leaves and half the sugar and use a cocktail muddler to gently mash the leaves with the sugar.
Demerara sugar is partially-refined raw sugar that is made from the first pressing of sugar cane. It is far less processed than granulated sugar.
It also lends a little toffee flavor to beverages
Fill with ice add 1 cup of cold brew coffee. Cover and shake vigorously.
Fill a mason jar with ice then pour the coffee over
Top the glass with ¼ cup soy milk
Garnish with a sprig of mint
