Mini Mojito Pies
INGREDIENTS:
6 mini ready made graham pie crust
1 pkg (85g) jello lemon flavor powder
1/4 c loosely packed mint leaveS
1/2 c boiling water
Zest and 1/4 c lime juice divided
1 pkg (4-serv) godiva white chocolate vanilla instant pudding
1 1/4 c milk
Coconut whipped topping
INSTRUCTIONS:
Pour lemon flavored gelatin into small bowl
Add handful of chopped mint leaves
Add 1/4 C of fresh lime juice
Add boiling water
Stir until gelatin is dissolved, while stirring, smash mint leaves against bowl
In a separate bowl:
Add one box of vanilla pudding
Add milk
Add lime zest
Whisk together for about 2 minutes
Strain gelatin mixture into pudding mixture and mix
Set in refrigerator for approximately 30 minutes
Finally…
Dollop filling into mini ready-made crusts
Top off with coconut whipped topping
Garnish with mint leaf
