Mini Mojito Pies

INGREDIENTS:

  • 6 mini ready made graham pie crust

  • 1 pkg (85g) jello lemon flavor powder

  • 1/4 c loosely packed mint leaveS

  • 1/2 c boiling water

  • Zest and 1/4 c lime juice divided

  • 1 pkg (4-serv) godiva white chocolate vanilla instant pudding

  • 1 1/4 c milk

  • Coconut whipped topping

INSTRUCTIONS:

  • Pour lemon flavored gelatin into small bowl

  • Add handful of chopped mint leaves 

  • Add 1/4 C of fresh lime juice

  • Add boiling water 

  • Stir until gelatin is dissolved, while stirring, smash mint leaves against bowl

In a separate bowl:

  • Add one box of vanilla pudding

  • Add milk 

  • Add lime zest 

  • Whisk together for about 2 minutes

  • Strain gelatin mixture into pudding mixture and mix 

  • Set in refrigerator for approximately 30 minutes 

Finally…

  • Dollop filling into mini ready-made crusts

  • Top off with coconut whipped topping

  • Garnish with mint leaf
