Mango Ginger Overnight Oats

INGREDIENTS

  • 2 cups quick-cooking oats

  • 1 1/3 cups water

  • 2/3 cup canned unsweetened light coconut milk

  • 2 Tbsp Agave Syrup

  • 1/2 tsp grated fresh ginger

  • 2 cups cubed fresh or frozen mango

INSTRUCTIONS

  1. Place 1/2 cup oats in each four-pint jar (Mason jars work well here).

  2. In a 2-cup measuring cup, combine water, coconut milk, honey, and ginger.

  3. Pour over oats in jars.

  4. Add 1/2 cup mango to each jar.

  5. Cover; chill overnight or until oats are soft. Top with pomegranate seeds, if desired.
