GREEK SALAD CUCUMBER BOATS

INGREDIENTS:

  • 4 large cucumbers

  • 3/4 c cherry tomatoes, chopped

  • 1/3 c kalamata olives, chopped

  • 1 sm red onion, finely sliced

  • 1/2 c feta cheese, crumbled

  • 1 tsp dried oregano

  • 2 tbsp extra virgin olive oil

  • 3 tbsp tzatziki sauce

  • Handful of basil or mint, chopped

INSTRUCTIONS:

  • Cut off ends of cucumbers

  • Cut cumber in half and in half again length-wise

  • Scoop out seeds and set cucumbers aside

  • In a large bowl, add:

    • Diced cherry tomatoes

    • Diced kalamata olives

    • Sliced onions

    • Add oregano

    • Add feta cheese (keep some on the side to crumble on top later)

    • Add olive oil

    • Add mint or basil

    • Mix together

  • Add tzatziki sauce into bottom of cucumber boats

  • Add salad

  • Sprinkle salt and pepper to taste

  • Sprinkle crumbled feta cheese

  • Enjoy!

TZATZIKI SAUCE

INGREDIENTS:

  • 1/2 large cucumber

  • 1 1/2 C plain full-fat greek yogurt

  • 2 large garlic cloves

  • 2 tbsp extra virgin olive oil

  • 2 tbsp white vinegar

  • 1/2 tsp salt

  • 1 tbsp minced fresh dill

INSTRUCTIONS:

  • Grate 1/2 cucumber into a colander

  • Set in colander refrigerator overnight to drain water from the cucumber

  • Add greek yogurt into large bowl

  • Mix cucumber into full fat greek yogurt

  • Mince 2 cloves of garlic and add into greek yogurt

  • Add dill

  • Add salt, extra virgin olive oil, and white vinegar

  • Mix well until blended

  • Cover and set in refrigerator overnight
