COCONUT POMEGRANATE MOCKTAIL

INGREDIENTS:

  • 1 L coconut water

  • 1 pomegranate, juiced

  • 1 tsp ginger, grated

  • 1 lime, juiced

  • 1 handful mint leaves

  • Ice

INSTRUCTIONS:

  • You’ll need a pomegranate, a large sealable ziploc bag, and a rolling pin.

  • We are going to cut open the pomegranate and remove the seeds into the ZipLoc bag.  

  • We’re going to double bag this and you’ll see why in a bit.

  •  You want to put aside a small handful of seedlings for garnishing later. 

  • Using a rolling pin, roll over the pomegranate seeds to release the juice.   

  • Here’s where double bagging can help add protection against unwanted leaks.  No one likes unwanted leaks :)

  • Put ice into cocktail shaker and add pomegranate juice, coconut water, 

  • Add grated ginger, and mint. Shake!

  • Put ice into cups and pour mixture over.

  • Garnish with mint, pomegranate seeds, and lime wedges.
