COCONUT MOCHA MOUSSE

INGREDIENTS:

  • ½ c/75g Hazelnuts

  • 1 15oz/400 ml can full-fat Coconut Milk

  • 2 tbsp Cocoa powder

  • ½ c/85g Dates, pitted

  • 1 tsp Vanilla

  • Pinch of salt

  • Cacao nibs (for topping)

INSTRUCTIONS:

  • Soak the hazelnuts in water overnight, or for at least an hour.

  • Blend together:

    • ½ c hazelnuts

    • 1 can full-fat coconut milk (the reason you’ll want to use this version of milk is to keep the consistency rich)  You’ll also want to choose a milk that has a high content of coconut.  Some are  less than 40%

    • 2 tbsp cocoa powder

    • ½ c pitted dates

    • 1 tsp vanilla.

  • Blend until all the dates, nuts and coconut milk are smooth. 

    • Will take a few minutes and don’t be concerned if the mixture gets slightly warm.

  • Pour into cups and chill for a few hours or overnight.

  • Sprinkle with cacao nibs, hazelnuts or any toppings you like.
