COCONUT MOCHA MOUSSE
INGREDIENTS:
½ c/75g Hazelnuts
1 15oz/400 ml can full-fat Coconut Milk
2 tbsp Cocoa powder
½ c/85g Dates, pitted
1 tsp Vanilla
Pinch of salt
Cacao nibs (for topping)
INSTRUCTIONS:
Soak the hazelnuts in water overnight, or for at least an hour.
Blend together:
½ c hazelnuts
1 can full-fat coconut milk (the reason you’ll want to use this version of milk is to keep the consistency rich) You’ll also want to choose a milk that has a high content of coconut. Some are less than 40%
2 tbsp cocoa powder
½ c pitted dates
1 tsp vanilla.
Blend until all the dates, nuts and coconut milk are smooth.
Will take a few minutes and don’t be concerned if the mixture gets slightly warm.
Pour into cups and chill for a few hours or overnight.
Sprinkle with cacao nibs, hazelnuts or any toppings you like.
