Chicken Pot Pie No Crust

INGREDIENTS:

  • 3 cups low-sodium chicken broth

  • 1/3 cup all-purpose flour

  • 4 tablespoons grated Parmesan cheese

  • Kosher salt and freshly ground black pepper

  • 1 cup frozen peas and carrots 

  • 1/2 rotisserie chicken, skin discarded and white and dark meat shredded (about 3 cups) 

  • 1/4 cup loosely packed flat-leaf parsley, chopped, for garnish

DIRECTIONS:

  • Combine 3 cups low sodium chicken broth and ⅓ c all purpose flour and whisk until flour is dissolved and this mixture comes to a boil

  • Be sure to continuously whisk until you get a thick enough to coat the back of a spoon.  

  • Reduce the heat and whisk in 

    • 2 T Parmesan Cheese

    • 1 tsp salt

    • ¼ tsp pepper

Next let’s stir in our peas and carrots and rotisserie chicken.  Voila!  Lastly, put it together with a croissant and garnish with parsley
