Chicken Pot Pie No Crust
INGREDIENTS:
3 cups low-sodium chicken broth
1/3 cup all-purpose flour
4 tablespoons grated Parmesan cheese
Kosher salt and freshly ground black pepper
1 cup frozen peas and carrots
1/2 rotisserie chicken, skin discarded and white and dark meat shredded (about 3 cups)
1/4 cup loosely packed flat-leaf parsley, chopped, for garnish
DIRECTIONS:
Combine 3 cups low sodium chicken broth and ⅓ c all purpose flour and whisk until flour is dissolved and this mixture comes to a boil
Be sure to continuously whisk until you get a thick enough to coat the back of a spoon.
Reduce the heat and whisk in
2 T Parmesan Cheese
1 tsp salt
¼ tsp pepper
Next let’s stir in our peas and carrots and rotisserie chicken. Voila! Lastly, put it together with a croissant and garnish with parsley
