Carrot Pasta with Ginger Lime Peanut Sauce

INGREDIENTS:

  • 3-5 Jumbo Carrots

  • 2 T Unsweetened Peanut Butter

  • 4 T Unsweetened Coconut Milk

  • 2 T Liquid Aminos

  • Pinch of Cayenne Pepper

  • 2 Cloves Finely Chopped Garlic

  • 1 T Grated Ginger

  • 1 T Fresh Lime Juice

INSTRUCTIONS:

To make the noodles:

  1. Take jumbo carrots and cut them in half

  2. Put in spiralizer and spiral noodles

To make Ginger Lime Peanut Sauce

  1. Put peanut butter into large bowl

  2. Add in coconut milk

  3. Add in liquid aminos

  4. Add pinch of cayenne pepper

  5. Add chopped garlic

  6. Grate ginger

  7. Add juice of 1/2 of a lime

  8. Mix until combined

Add in noodles and mix! Add fresh cilantro and crushed peanuts to top it off.

* Add your favorite protein to make this into an entire meal and add some crushed roasted seaweed!

* Turn this into a warm meal by warming up the noodles
