BANANA COCONUT CREAM PIE

INGREDIENTS:

Graham Cracker Crust

  • 12 individual pre-made graham pie crusts

Cream Pie

  • 1 3.4oz box instant Banana Cream Pudding (you could also use coconut or vanilla instant pudding)

  • 1 cup unsweetened almond milk

  • 1 1/2 cups shredded coconut, unsweetened

  • 3 tbsp butter

  • 3 tbsp packed dark brown sugar

  • Pinch of salt

Whipped Cream

  • 1 9oz tub Dairy Free whipped topping

Extras

  • 2 large bananas, sliced

  • Toasted unsweetened coconut for garnish

INSTRUCTIONS:

  • Slice bananas place aside

  • In skillet, melt the butter on medium.  Add brown sugar and salt.  Cook 1-2 min until sugar melts, stirring often.

  • Add bananas and cook 1-2 mins until bananas are well coated.  

  • Set aside to cool

  • In a large bowl, mix instant banana cream pudding mix and milk until combined (don’t follow instructions on box.  the pudding will be thick). Add in shredded coconut and mix. Set aside.

  • Fold half of the whipped cream into the pudding mixture. Reserve the rest of the whipped cream for the topping.

  • Place sliced bananas in the bottom of graham pie crust.
