BANANA COCONUT CREAM PIE
INGREDIENTS:
Graham Cracker Crust
12 individual pre-made graham pie crusts
Cream Pie
1 3.4oz box instant Banana Cream Pudding (you could also use coconut or vanilla instant pudding)
1 cup unsweetened almond milk
1 1/2 cups shredded coconut, unsweetened
3 tbsp butter
3 tbsp packed dark brown sugar
Pinch of salt
Whipped Cream
1 9oz tub Dairy Free whipped topping
Extras
2 large bananas, sliced
Toasted unsweetened coconut for garnish
INSTRUCTIONS:
Slice bananas place aside
In skillet, melt the butter on medium. Add brown sugar and salt. Cook 1-2 min until sugar melts, stirring often.
Add bananas and cook 1-2 mins until bananas are well coated.
Set aside to cool
In a large bowl, mix instant banana cream pudding mix and milk until combined (don’t follow instructions on box. the pudding will be thick). Add in shredded coconut and mix. Set aside.
Fold half of the whipped cream into the pudding mixture. Reserve the rest of the whipped cream for the topping.
Place sliced bananas in the bottom of graham pie crust.
