Beet & Goat Cheese Salad

INGREDIENTS

For the dressing

  • 6 Tbs olive oil

  • 3 Tbs balsamic vinegar

  • 3 tsp maple syrup or agave

  • 1 ½ tsp Dijon mustard

  • For the salad

  • 5 oz arugula

  • 3-4 small/medium beets, sliced

  • ½ cup red onion, thinly sliced

  • ⅓ cup praline pecans 

  • ½ cup goat cheese, crumbled 

DIRECTIONS

Assemble the salad by layering your ingredients, top with your favorite nuts then drizzle with balsamic dressing.
