Beet & Goat Cheese Salad
INGREDIENTS
For the dressing
6 Tbs olive oil
3 Tbs balsamic vinegar
3 tsp maple syrup or agave
1 ½ tsp Dijon mustard
For the salad
5 oz arugula
3-4 small/medium beets, sliced
½ cup red onion, thinly sliced
⅓ cup praline pecans
½ cup goat cheese, crumbled
DIRECTIONS
Assemble the salad by layering your ingredients, top with your favorite nuts then drizzle with balsamic dressing.
